Dinner Last Night

I have made this recipe for the last couple of years.  I can't remember where I got it though. I think it was off of a cooking show on TV, but not 100% sure. We love this recipe, even the kids like it. I'll give you the recipe as I have it written down then tell you how I make it.

 
 
Chicken Portobello Penni

Cook chicken in olive oil. Add 1 cup spinach, 1/2 cup plum tomatoes, basil and garlic. Cook for 30 seconds. Add portobello mushroom sauce. Simmer. Add cooked Penni. Garnish with Parmesan cheese and basil.
 
I cook the chicken (two breasts) on low heat with olive oil, parsley, salt and pepper. When the chicken is done, I shred it. While the chicken is cooking, I chop the spinach (kids like it chopped better then whole leaves) and the tomatoes. I also make the pasta (you could use any kind). Add the shredded chicken back to the pan, add the spinach and tomatoes. Cook on low heat till the spinach is wilted and the tomatoes are cooked down. While that is cooking, I make the mushroom sauce (you can buy it). Saute the mushrooms (one whole package), a little basil, salt and pepper till the mushrooms are cooked down. Add cream, simmer till the sauce has thickened a little. Add about a cup or so of Parmesan cheese. Pour the sauce over the chicken mixture. Simmer for about 10 minutes or so. After I put it into the bowels, I sprinkle a little more Parmesan cheese and basil on top.

  1. ok, that makes so much more sense than the txt recipe I tried to follow...lol:) I couldn't figure out where the mushrooms and the sauce got combined..haha. I just added a little bit more olive oil to mine. It was soo good but Ben said he would have liked it more with a cream sauce...haha:) This will become a regular dish for us!!
